Instructions:

Cooking the Rice:

1. Wash the basmati rice thoroughly and soak it in water for about 30 minutes. Drain the soaked rice and set it aside.

2. In a large pan or kadhai, heat vegetable oil or ghee over medium heat.

3. Add mustard seeds to the hot oil and let them crackle.

4. Add cumin seeds, peanuts, and cashew nuts (if using) to the pan. Sauté until the nuts turn golden brown.

5. Add slit green chili and curry leaves to the pan. Sauté for another minute until aromatic.

Cooking the Lemon Rice:

1. Add the soaked and drained basmati rice to the pan. Mix well to coat the rice with the tempered spices and nuts.

2. Add turmeric powder and salt to the pan. Stir to combine.

3. Add 2 cups of water to the pan. Stir gently to combine all the ingredients.

4. Cover the pan with a lid and let the rice cook on low heat for about 15-20 minutes, or until the rice is cooked through and all the water is absorbed.

5. Once the rice is cooked, remove the pan from the heat.

6. Add lemon juice to the cooked rice and mix gently to distribute evenly.

7. Garnish with chopped fresh coriander leaves before serving.
